Coming from the Gaelic uisge-beatha, the word whisky means 'water of life'. The illegal manufacture of whisky was widespread throughout the Highlands in the 18th and early 19th centuries, as farmers and crofters tried to avoid taxes imposed on malt and the spirit itself. The isolated parish of Gairloch was ideal for illicit whisky manufacture, so residents could distil and smuggle whisky with little need to worry about the law. Illicit stills were situated in out of the way places, hidden in caves or ravines, under rocky outcrops or on islands.
